Pork Chops with Apples and Thyme

Pork chops and wild rice on a plate

I found a great recipe on www.eatingwell.com the other day and so we decided to try it out tonight with long grain wild rice on the side.

It was super fast and easy to make and delicious so I wanted to share it with you.

Pork Chops with Apples and Thyme

Ingredients:
¾ cup low sodium chicken broth
2 teaspoons of cornstarch
2 teaspoons of canola oil
Boneless pork chops, ½ inch thick, trimmed of fat
1 small onion sliced
1 granny smith apple peeled and sliced
¼ cup apple cider or apple juice
2 teaspoons of Dijon mustard
¼ teaspoon dried thyme

Directions:
Mix 2 tablespoons of broth and cornstarch in a small bowl.

In a large nonstick skillet, heat oil over high heat.
Add chops and cook until browned, 2-3 minutes per side. Transfer to a plate.
Reduce heat to medium-high and add onion to the pan, stir until it starts to soften and brown.
Add apple and cook until tender, 3-5 minutes.
Stir in the remaining broth, cider or juice, mustard, thyme and the cornstarch mixture.
Bring to a boil, stirring until thickened and glossy, about 1 minute.
Return the chops to the pan and heat through.
Serve immediately.
